Pumpkin Treats

Yield: 24 - 26 "Cookies"

Ingredients:
  • 1 cup pecans
  • 1 cup walnuts
  • ½ teaspoon salt
  • 1½ cups medjool dates, seeds removed
  • 1 teaspoon vanilla powder
  • 1 teaspoon cinnamon
  • 1teaspoon nutmeg
  • 1 cup finely grated pumpkin
  • ½ cup pumpkin seeds
Advance Preparation:
  1. Separately, wash pecans, walnuts and pumpkin seeds, soak for 12 hours, drain, dehydrate for 12 hours at 95º Fahrenheit.
Steps:
  1. Place all ingredients except pumpkin and pumpkin seeds in a food processor and process well.
  2. Remove small amounts of cookie dough, approximately one inch round.
  3. Roll dough into a ball and roll into finely grated pumpkin, covering until the ball is orange.
  4. Decorate the "pumpkin" with pumpkin seeds:  Press one on top for the stem, two for the eyes, and one for the mouth.
