Apple Pie

Serves 8

Ingredients:
  • 1 Nut and Date Pie Crust
  • 6 Golden Delicious apples, peeled and cored
  • 1 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 5 medjool dates (pitted)
  • 1 teaspoon vanilla powder
  • 1 cup raisins
  • 2 teaspoons flax seed, ground fine
  • ½ cup walnuts (dry) for topping
Advance Preparation:
  1. Prepare Nut and Date Pie Crust according to recipe and press into a pie plate.
  2. Soak walnuts for 12 hours, drain, dehydrate for 12 hours.
Steps:
  1. Start with Nut and Date Pie Crust in a pie plate.
  2. Process 3 apples, honey, salt, cinnamon, dates and vanilla in food processor (using "S" blade) until mixture is the consistency of applesauce.
  3. Add 2 apples to food processor, and pulse leaving small pieces.
  4. Place mixture in a bowl.
  5. Take remaining apple and slice thinly. Cut stack of slices in half. Add to bowl.
  6. Add raisins to bowl.
  7. Add ground flax seeds to bowl, stirring well.
  8. Place apple mixture in pie crust.
  9. Chop walnuts, sprinkle on top.
Note: Raisins and flaxseed soak up juice from apples.
